For Dumble style amps, I've found that I prefer a thiele 1x12 enclosure loaded with an EVM 12L when compared to a 2x12 open back.
In the 2x12 I've tried 2 Celestion 12-65's, a 12-65 paired with a Texas Heat. I did like the 12-65 with the T-Heat better than 2 12-65's.
I just get too much boomy bass with the 2x12. The Thiele tightens up the bass, smooths out the mids, and now that the EV is broken in, the highs are much better.
now I would like to try an open backed 1x12, any suggestions? Maybe Pine.
When I gig I only take a 1x12, because of the convenience. So that has become my focus.

I purchased one of the wide 1x12 cabs and loaded it with an EVM12l and couldn't be happier.
Mine has three panels on the back for various open or closed back configurations.
I prefer closed back, with the way the pine sings it sounds sort of like a cross between open and closed back.

I've tried a number of different configurations and ended up with an Avatar 112W Traditional cab with an old broken in EV12L from a 1986 Mesa Boogie MKIII.  The cab has the oval opening in the back.  The perfect balance all around.

I make a signature 1x12, very stout with extra depth for box volume.  I use voidless birch and it absolutely sings.  I usually do a medium port on these to retain the bass but still give the volume  of an open back cab.  If you are interested let me know.  They can compete with much larger cabs

Which model did you get, BS112U? Or was it custom made since you have 3 back options?

I have a 1X12 configuration that works quite well with a lot of speakers. It's about 21" X 18" X 12". Solid pine sides, birch ply front and back panel with a 7" X 14" oval opening on the back. Fairly light and resonant. Sounds great for a small cab! Here's a pic with a matching head:
