There is no one magic tube that you can buy that will fix the V1 issue. You have to try as many tubes in V1 as it takes to find one that works eg. non-microphonic first, and low noise second.

I've read all that stuff about shielded wire in there so I might consider taking it back out. But that's just being me I guess.

wire placement is critical in these amps they're a bit of a nightmare to get perfect, I recently built an amp based on a trainwreck with a 5w power section, although we ended up with some very different tonestack values and somewhat reduced gain and no phase inverter which in it's self reduced the gain somewhat but it was still an absolute screamer, it's currently pride of place in a local studio.

This scares me. I was going to doa wreck for my first build thinking it was simple; no channel switching etc.
I could do a 5E3 but I dont know that i'd really use that.
Would an express be a good choice as a first provided I got a good kit?

Yes they looks simple enough but are on the brink of instability so maybe not the best choice for a first amp since you may have to troubleshoot it quite a bit to get it going good.
On the other hand, if you pay attention to detail and look at the vast amount of pictures here of peoples builds, you could certainly luck out and end up with a good amp.
Be forewarned, these are loud amps that most think sound the best cranked up so you may also want to consider building an Airbrake as well.
