You have to learn or 'develop' the chops to work your guitar [and amp]. Takes time.
The biggest part of why Paul Desmond, Ben Webster, so many others sound so good on their instruments.
I find that too. (dynamics make an acoustic) I had a larrivee that lists for $3k and i now own a $350 recording kind i much prefer ! The reason: dynamics. There are lots of great sounding cheap acoustics today, but what people don't get is they can sound fantastic, even as good or close to some high dollar boutiques. But if they are compressed sounding then no matter how good the tone is they fall flat. At first you can be fooled by a great sounding one, but after a while of ownership you begin getting bored with them and you don't know why. I eventually learned why and the $350 guitar i now own sounds great, but more importantly had great dynamics. That larivee was very impressive sounding, but the dynamics were all but not there. It was like you had a compressor on all the time.
On a side note, consider this....heavy cast tuners can stifle a guitar's dynamics, especially a small body like a 000 type such as mine, which came with them. I got conversion bushings and a set of open gear grovers for $30 and the dynamics improved a lot. This is why i tend to shy away from any guitar with heavy cast tuners. Some i'm sure won't be affected, mainly i think due to weight. If the guitar is heavy to begin with the effect will likely be minimized. But it's something to consider and it really does matter. It's just a matter of how much YOU notice it. On a very small light guitar like a small body acoustic the effect can be much more noticeable.
