I have believed that the old Pre-CBS era transformers across the board (Hammond, Drake, Partridge, Fender OEM, and others) were all hand wound. What about leaf vs. other style?
Are there any other modern transformers that are "hand wound'? The aging of the wire on the old hand wound transformers really gives that golden age tone.

Old transformers were not hand wound. The metal was different, insulation different, maybe the wind was different, and they are now old and broken in.
