Hi , I have a plexi-style amp with 2x EL34 ; there is a way to switching the power from 50w to 25/30w without the use of a power scaler?
Thanks
50w switchable to 25W is possible?

Easy way is to use 6V6s JJ tubes. You get a volume dump!
Switchable? Not so much.

Go triode strapped? This is disconnecting the screen supply and connecting the screen grids to the plates, keeping the screen resistors in between. See Marshall 2550. Different sound... some find it useful, others take a pass.

Engineers win. That is a very soft option, for sure. Takes the face off of your tone.
With the 6V6 you get something you are kind of used to with maybe a bit more snarly face.

The end result is only 3dB reduction in SPL.
The half power amp would have a stiff power supply (unless additional measures were taken), so would not respond like the 50 watt amp.
What were you hoping to achieve?
