Im sure there is a layout & schematic for a Trainwreck build with 2 el84's. Can anybody point me in the right direction and If you have built or heard it, what are your thoughts?

Layout is not really your issue in building a 2xEL84 Rocket or Liverpool. You can use the same layout as the normal 4xEL84 version, minus 2 tube sockets.
The issues you will have to confront will be selecting the right transformers and (in the case of the Rocket) selecting the right cathode resistors. The cathode resistor question can actually be easily solved by looking at an AC15 schematic - 130 ohm/5 watt is probably a good starting point. As for the transformers, I will have to defer to someone else more knowledgeable.
By the way - don't expect a 2 bottle amp to be much quieter than a 4 bottle amp. The difference in levels is often not as big as one would think.

Steve is right on money here. Several of us have built Rockets or Pools with a half power switch and the difference in volume is fairly small. If you don't have any size constraints on your chassis size, build the four holer and run the half power switch. I have built many a 15/18/20 watt Wreck style amp, and currently have a few extra sets of custom wound Heyboer transformer sets that would work for EL84s or 6V6s. PM me for details.
The PT is like 5199, however rated at 150mA. OT is like a Woden but 8.6K. More appropriate for a half power Rocket than a Liverpool, but would work for the later.
