Shortening that grid wire made the issue bad again so changed it back. Shortened the first stage cathode wire which didn't make a difference. Think thats pretty much all of the wires that I can shorten. Tried moving others about to make it quieter but with all controls on 10 nothing changed the level of hiss or hum.
Still haven't tried shielded cable as I've made the amp a lot less prone to oscillation by just shortening the V3 cathode wire. Can't believe that! Dead chuffed. Next I'm going to upgrade the 1/2W Resistors to 1W but will measure the level of hiss before and after.
