Sound wise how much different could a .0047 ceramic sound from a 500pf mica? [/u]

A BIG difference. .0047µF = 4700pF.

Statements like 'Fender used ceramic caps' or 'I used ceramic caps from snakeoil.com with great results' are meaningless.
Some ceramic materials have linear audio signal performance, so don't.
Unfortunately some suppliers, including some specialising in amp stuff, don't publish that detail. And if it's not specified in their offering, they could send a different type each time you order.
