Common Mode Choke

I've never seen a common mode choke used in a guitar amp.

Any reason other than cost?

There's not much reasons to use them aside from blocking EMI and RFI from power supply lines. That is, they have far more use in SMPS applications than in any other.

And in SMPS applications they are rather commonly used, yes, in guitar amps too.
