Bi Polar cathode bypass caps

I know it will "work" but is there a reason that polarized electrolytics are used?

Cost. Since there's no real reason to use bi-polar why spend the money. Some amp manufactures use poly caps but in higher values needed for by-pass they can get pretty costly and large
