And for folks who don't mind spending a little more... I got four 50w, 4R resistors, and a 4P3T rotary switch and made Aiken's 2/4/8/16R load box. Very nice. About $50 in parts. I added the line out tap.

It's the simplest line out ever, and totally independent from the dummy load. It's just speaker out > 10K resistor > 10K pot > line out
E.g. (see lower part of schematic, where it says "Line-out"),
In practice, it sounds pretty bad, because your ears are expecting to hear a speaker cabinet. You can run the output thru an IR or other speaker emulator and get in the ballpark.

A bunch of parallelled 1-2W resistors to suit impedance, in an empty paint can or similar filled with oil... any oil will do...

For bass amps or PA amps, electrical heaters in water are ok too: they are rated for kWatts.
