I'm just in the process of ordering parts for my #183 build and trying to decide on transformer. Now, I have transformers out of a 100 Watts Hiwatt Custom shop floating around. Could I use them for the #183?
I would , and do stuff like that all the time. Of course you'll typically want to keep your voltages within 20% of the listed values. You will need to adjust your dropping string as well but it shouldn't be a problem just be sure to have some larger values than what the design lists in the power supply resistor area. The preamp tubes love to see what they're supposed to have and not much more if you want them to sound good.

Thanks. So basically build it with the Hiwatts, measure the voltages and then experiment with the resistors to come close to the original voltages?
