The "center tap" (tail) of the bridge is not actually grounded in the Mesa schematics.

I think what most folks are warning against is grounding the xfmr center tap AND grounding the tail of the bridge. If you do that you WILL have a fried xfmr.

Thanks for the advice

I've also examples were Mesa didn't connected the 6.3v CT to ground

see the attached images

but this is because all the other schematics have a mistake or what ??

I'd suggest you build a small prototype board with a few tubes, and try out the various heater schemes. (I built something like this: http://www.tubelab.com/The_Tubelab.htm) Try them yourself before you become attached to any one way of doing things. Use a scope to verify that the heater "signal" is not showing up on the plate.
