I've had decent results using Audacity. It's pretty user friendly, although it does seem to have a few bugs.
I use a little Behringer 8 channel mixer and run it to my PC via the included USB interface, and it is more than I need for what I do.

My buddy used Audacity before he upgraded to some fancy expensive thing and those old recordings weren't bad at all. It's nice to hear good things about it, since it's free. I'm about to install it on this computer.
