I,ve used a tt unit before but have been looking at this one for a project i,m working on, it has 2 250 secondrys which if i am reading right could be used in series with a centre tap to give 250-0-250 with the same for the twin 6.3 secondrys, could someone have a qiuck look and confirm for me

Yes you could connect the 250V secondaries in series and use CT FWB to get around 320VDC. That's on the low-side for a guitar amp. In series it'd be twice that, which is on the high side... You'd want to connect the 6.3V windings in parallel to get 6.3VAC@8A.
