I'm working on a speaker cabinet that will allow me to mix and match the speakers. I'm wondering if this switch will handle the power or if someone can suggest another option?

I worry about voltage and current ratings on switches like that.
Since this switch would need similar ratings to an impedance switch, the most popular series I've seen for that use are from ElectroSwitch - they're a light green color - I've seen them in gut shots of Paul Ruby's amps and Aiken Amps, for example.
I'm not sure if this is the right series (they have a bunch), but you can get them in almost any combination of decks and poles in many voltage/current ratings:

Another popular impedance switch is the NKK hs13y - I use these, and I think NKK also makes them with different deck and pole combinations:
