I've never used a water jet but I imagine it would not work well.
The best reason I could give is soaking the plywood. Once birch back gets really wet it goes to crap. Plus I don't know how the swelling of the wood due to water would affect the cut.
Interesting thing on this laser. It doesn't cut straight down. Because the thickness of the material is so large the laser goes down and curves off by about 1-2 degrees. I'm conceptualizing how to use this to my advantage by "make shifting" dovetail joints this way.
As far as speed. It cut those two cabinets in 30mins, definitely better than the 20 hours it would take me.
