Fuse voltage ratings

Suppose I have am amp that was designed to run on 120 volts from the wall. Would there be any difference if I were to use one of these fuses?
120 volt 2 amp
or
240 volt 2 amp

No. I am not sure who actually makes a 120V rated fuse, I understood most were rated 250V anyway. 2A is 2A.

Voltage ratings may be greater than what you are running - it is a reflection of the insulating and arc breaking capability. More is good.

The current rating is what you need to observe in a fuse. Do not raise the current rating without good cause. That's what the fuse is there for.
