People with a lot of fancy test gear are probably compensating for some other deficiency ;^)

I picked up a vintage tube tester, B&K dynajet - it tests for shorts and grid emission/ strength. It's wonderful when you have an amp with fifty million tubes (Mesa boogie, etc)
The more I use my oscilloscope the more I value it. Get a probe rated for x10 300v and you can do lots of things...tell if your caps are shot, check polarity on unmarked caps, trace signal, check ICs, I can even trace oscillations by running my probe near ac wires and you can visually see the signal appear out of thin air.
I also made a probe to check plate voltages and bias - like those bias scout things. Handy for when you don't want to open the amp up to do some basic checks.
Martin manning posted a layout for his super awesome dummy load with scope input. That thing Is an awesome tool! I just finished building mine.

Magnifying clamp light. Best thing I ever bought. I have two of them now. The glass isn't very useful, but the light sure is.
