bias pots

What kind of pots should be used for a bias control? I would assume linear but want to make sure.

Yes, linear. Cermet element is best, but plenty of amps use carbon (carbon is less happy with DC, but you won't be turning it that much.)

I like the good old fashioned CTS 10K linear, just like Fender used.

I like the 3 watt RV4 PEC pots.

They are short slotted shaft, with a locking bushing nut to hold the position.

A little spendy at about $10 each but I have used these in several amps with good results.
