I was curious and did the headphone test to see where the least amount of hum was with the output transformer and ended up here. If the OT is mounted with the bells in this direction, will I end up with oscillation issues?
These are both MC trannys - Fender 100W power and Marshall 100W output.

I don't think you will have any oscillation issue.  Did you try it with the OT turned ~90 degrees from where it is so the core is running front-to-back on the chassis?

During my last few builds, I was a proponent of the headphone trick. But on this last build, I was struggling with the last small bit of hum, and decided to loosen my trannies up, and see if I could purposefully orient them badly to introduce hum into the working amp. Couldn't. During headphone placment, I know there was a position that had hum, but I couldn't affect the finished amp at all by rotating the trannies.
