dumb Celestion Gold question

I don't have one to look at....where does it tell you whether it's the 8 ohm or 15 ohm version? It's clearly not on the main label.

I would guess that the original blues were only 15 ohm back in the early 60's, so it's not on the vintage style label for the Gold.

Your meter will read about 75% of the rating. That is, ~12 Ohms for a 16 Ohm speaker, ~6 Ohms or so for an 8 Ohm, etc. It isn't perfect, but you'll know when you see the reading. If you don't feel it is too disrespectful, use a Sharpie to write the result on the speaker. I know that's what I'd do. BTW, Sharpie usually wipes off with a rag and alcohol.
