Ok, the pots listed in the parts list are 2 watts, is there a reason they are 2 watts for this build, or can you use normal 1/2 watt pots like CTS, Alpha and such.
You may use standard pots - some builders love Bourns pots, most use Alpha's. Their feel, precision and longevity won't be as good as Mil-spec'ed PEC's, that's all.
