Essentially, I just unscrewing the chasis for the old head and placing it into a new cab, so technically my hands aren't 'inside' the guts of the head.
However, I will still discharge the caps for safety sake.

basically it states: all you need to do is to turn the power off while leaving the standby on*, and wait a couple of minutes. All the caps will discharge through the resistors.

I want to transfer an old 100w head's "brains" into a custom cabinet I built.
What do I have to be aware of?? I don't want to be electrocuted doing this.
